Made by a skydiving winemaker using a sparkling technique older than Champagne's traditional method!
The sparkling wine made by a winemaker who likes jumping out of aeroplanes.
Meet WS Visagie, a winemaker, qualified pilot and occasional skydiver who compares making ancestral-method sparkling wine to parachuting without a reserve chute! His adventurous spirit is captured in this fascinating Verdelho, made using a centuries-old technique that predates Champagne's familiar method. Rather than starting a second fermentation, the wine is bottled while its first wild-yeast fermentation is still underway, allowing the bubbles to form naturally inside the bottle. Four to five months resting on its lees bring delicious complexity: fresh lime, crunchy green apple, warm brioche and toasted almonds, all wrapped in a delicate, creamy sparkle. Wonderfully unconventional, refreshingly vibrant and absolutely delicious with oysters, sushi or seafood.
